What is “jazz music” and what kind of instruments are used to produce jazz music?

The textbook definition: A music that is played with delayed notes, beats that can be changed SMOOTHLY (thats a key word there), and is played with a multitude of instuments including, but is not limited to, Trumpet, Alto/Bass saxaphone, string bass, cello, violin, piano/keyboard.

My definition: Music that is played from the soul, not a sheet of paper.
